Coconut Pie Crust

For anyone who’s made pie crust you know that it is a “specific” kind of task. You have to use the right ingredients; the right steps and you need to end up with the correct consistency at the end. Furthermore, when you think of making the traditional pie crust recipe into it’s paleo equivalent you may not know where to start because you literally need to replace all the ingredients with something different.

The following is an easy recipe for a paleo pie crust. What’s even better is you most likely already have the ingredients you’ll need. It requires a little more attention but even if you don’t have a ton of baking experience you’ll be able to handle it.

INGREDIENTS

3 cups of shredded coconut (just coconut, it should not be sweetened)
4 tablespoons coconut oil
4 tablespoons cashew butter (you can replace this if you’d prefer almond instead)
3 tablespoons honey
1/4 teaspoon salt

RECIPE

Preheat oven to 350°F.
Place coconut in food processor and process for a few minutes until shredded coconut looks almost like it has been grated.
Place processed coconut into a bowl and set aside.
In a small microwave safe bowl add coconut oil and cashew butter, place in the microwave for 30 seconds or until coconut oil has melted.
Add coconut oil and cashew mixture to the processed coconut; also add the honey and salt.
Mix together until thoroughly combined.

2015-08-28 11.20.44Place in oven and bake for roughly 20 minutes or until golden brown.
Remove and let cool before adding filling.

Note that sometimes the pie crust may fall down towards the bottom of the pie dish slightly during baking. If this happens it’s not a problem at all, simple use the back of a spoon to push the crust back into position. As the crust cools it will harden and maintain its intended shape.

Asian Nut Sauce

You might remember me mentioning before that I was looking for some type of nut sauce to pair with spring rolls, that’s where the post on Cashew Butter came from. The prefered sauce normally is a peanut sauce, however that’s not Paleo so I needed to get a little creative. The following recipe is a great example of how you can take a recipe you already know and with a slight change you have something completely different!

Ingredients

3 ounces cashew butter
1 tbsp coconut aminos

Recipe

Combine cashew butter and coconut aminos thoroughly.

It’ so simple! This goes to show you that you don’t have to spend a ton of time to come up with something new. Get a little creative this week and try spicing up the recipes you already know how to make. You’ll be amazed at your wonderful creations!

Cashew Butter

I came up with this lovely concoction when I was attempting to make a peanut style sauce for spring rolls. It requires an extra step or two more than what is normal for our recipes but it’s well worth it. This is a delicious cashew butter that you can use on almost anything, even if you just pair it with an apple.

INGREDIENTS

1 ½ cups cashews
2 tbsp coconut oil, melted
¼ cup apple cider vinegar (the vinegar provides a slightly fruity flavor to the butter, feel free to substitute with water if you prefer)
3 tbsp honey
½ tsp salt

RECIPE

In a food processor blend cashews until you have little granules.
Bring a medium sauce pan to low heat, combine coconut oil, vinegar, honey and salt.
Add processed cashews to liquid mixture and stir until well combined.
If you would like a smoother consistency pour back into processor and blend until you reach desired consistency.

This cashew butter recipe is simple to make. It has a sweet taste and can be used as a topping for several of the baked good recipes we feature. It can also be paired with fruit to provide a filling snack.

Frozen Summer Snack

Continuing with our theme of fun summer treats that are sure to make you smile, we have a fantastic snack that will fill you up and basically requires no work to make. It’s easy and fast…so basically it’s the best kind of recipe.

INGREDIENTS

1 banana
almond or cashew butter
agave or honey

RECIPE

Cut the banana into 1/4″ to 1/2″ slices.
Place a spoon full of your preferred nut butter on top (roughly 1/2 tbsp.)
Drizzle with your choice of sweetener.
Place in the freezer for 30 minutes.

Yes it’s really that simple and it’s that good! I hope you enjoy this lovely summer treat.
