Paleo Rice Pudding

I love rice pudding. However, an egg allergy and being Paleo tends to get in the way of me enjoying this treat. The following is an egg-free, Paleo version of this classic dessert.

INGREDIENTS

3/4 cup coconut milk
2 tablespoons Chia seeds
1 tablespoon honey
1/4 teaspoon cinnamon (optional)

RECIPE

Add coconut milk, Chia seeds, honey and cinnamon to a bowl.
Mix thoroughly.
Place in the fridge for 1 hour, then serve.

Yes it’s really that simple!  It’s also that delicious.

PALEO CHOCOLATE PUDDING

Finally a dessert you don’t need to feel bad about eating! You’ll have a hard time believing that this chocolate pudding is Paleo when you taste it but I promise it is very much Paleo. It’s packed with healthy fats and Omega 3. This is perfect as a dessert or even a snack during the day.

INGREDIENTS

3/4 cup coconut milk
3 tbsp honey or agave
1/2 cup cocoa powder
1 tsp chia seeds
1 ripe avocado

RECIPE

Place all ingredients into a food processor and blend until smooth.
Scoop into a bowl or container, place in the refrigerator for 1 hour for chia seeds to grow.
Enjoy!

Yes it really is that easy!
