So you love cheese and butter? Who doesn’t! Here’s the deal–a true Paleo diet does not include either–neither were available in Paleolithic times and our bodies are subsequently not naturally adjusted to eating these dairy bi-products.

That said, some of you are lactose tolerant (though I am not one of you lucky folks) and some of you may be able to consume small amounts of cheese and butter without feeling the after effects in and on your body.

While I am not an advocate of dairy and I strongly promote the use of coconut oil and ghee butter as an alternative to traditional dairy butters, if you do decide to indulge now and then, do yourself this one favor–buy grass-fed.

Why is grass-fed better?

Grass-fed dairy, just like grass-fed meat is the product of healthier animals. Rather than being fed grain or vegetarian diets that typically include modified starches and corn meal, grass-fed cows roam free, eat naturally and live healthily. It’s only logical that their milk and meat is therefore more healthy for us as well.

Research has shown that grass-fed dairy contains a lot more CLA (conjugated linoleic acid) and natural vitamins than grain-fed butter. It also has a much better ratio of Omega-3 to Omega-6 fatty acids. Choosing grass-fed means that while you indulge in dairy, you are actually getting some benefit: CLA has been shown to improve heart health, K2 vitamins reduce arterial plaque and aids the body in using calcium correctly, and Omega-3 fatty acids support our metabolism, reduce inflammation and fuel our bloodstream and brain.

The great news is, grass-fed butter and cheese is more accessible than you would imagine. These products are typically available in any grocery store or online at one of these great pasture butter and cheese suppliers:

Yam Fries and Spicy Aioli

Just because we’re Paleo doesn’t mean we can’t indulge in fries, especially healthy homemade yam fries. They make a great little (but filling!) snack and an excellent side to just about any dish, plus they are incredibly easy to make.

INGREDIENTS

1 yam
1/4 cup coconut oil
1/4 cup paprika

RECIPE

Set the oven to 425 degrees F.
Peel the yam and slice it into thin strips.
In a medium sized pot, bring water to the boil and cook the yam strips on high for a few minutes (they should still be firm when you remove them from the pot).
Remove the yams from the boiling water and lay out on a foil-lined baking sheet.
In a small saucepan, heat the coconut oil until liquid.
Drizzle the coconut oil over the yams and then sprinkle with paprika.
Place in the oven for about 15 minutes (or longer if you prefer them crispy).
Remove from the oven and serve hot!

SPICY AIOLI

For a quick and tasty dipping sauce combine the following in a small bowl (or blender if you prefer it pureed):

1 garlic clove, finely chopped
1/2 teaspoon black pepper
2 teaspoons coconut milk
1/2 jalapeño, finely chopped
1 teaspoon raw agave nectar

Spicy Aioli

Valentine’s Cookie Demo at Vitamin Cottage

It’s the month of love and what better way to celebrate than by baking a batch (or two!) of chocolate chip Paleo Cookies? That’s exactly what we’ll be demonstrating tomorrow at 2pm at Vitamin Cottage, Littleton.

In preparation, we spent this evening baking giveaway samples of both Chocolate Chip and Chocolate Orange Zest Cookies, much to the enticement of the shoppers who were drawn to the sweet scent of Cookie heaven.

Sweet Citrus Chicken Wings

These chicken wings are baked, so other than the five minutes of prep-time and the 45-55 minutes of waiting while they bake, this recipe is super simple, succulent and superbly delicious. Chicken wings have never been so sweet…

INGREDIENTS

6 fresh/defrosted chicken wings
4 dates, chopped
2 tablespoons coconut oil
1/2 cup freshly squeezed orange (blood orange is my favorite)
6 tablespoons paprika
1 teaspoon thyme

RECIPE

Preheat the oven to 375 degrees F.
Place the chicken wings in an oven dish and top with the coconut oil.
Add the chopped dates.
Drizzle with 1/2 the orange juice and sprinkle with 1/2 the paprika.
Place in the oven and set the timer to 35 minutes.
Remove from the oven and turn the chicken wings.
Drizzle with the other 1/2 of the orange juice and sprinkle with the other half of 1/2 the paprika.
Place back in the oven for approximately 10-15 minutes.
Remove from the oven and serve the chicken hot, drizzled with the date and orange sauce from the oven dish and topped with the thyme.

Agave Spiced Sausage

Our favorite new breakfast treat: Agave Spiced Sausage!

If you’re anything like me, protein for breakfast is a must and as much as I love bacon, sometimes switching it up makes life a little more interesting.

This recipe couldn’t be easier:

INGREDIENTS

2 tablespoons raw agave nectar
2 teaspoons Italian seasoning
1/2 pound breakfast sausage
1 tablespoon coconut oil

RECIPE

Place the sausage in a small bowl.
Using your hands, work the agave and Italian Seasoning into the sausage meat.
Once well combined, form the mixture into patties.
Heat the coconut oil in a medium saucepan.
Grill the patties until well done, turning periodically.
Serve hot and enjoy!

Paleo Pie Crust

We all love pie and just because we’re Paleo doesn’t mean we’re giving it up! This easy-to-bake recipe is a great substitute to regular pie crust, only it’s made with coconut flour and natural sugar, so you can indulge without the guilt.

INGREDIENTS

2/3 of a cup coconut flour
1/2 cup arrowroot flour
1 pinch of sea salt
1 teaspoon of coconut palm sugar
2 tablespoons of pure coconut oil
2 eggs
3 tablespoons water

RECIPE

Preheat the oven to 425 degrees F.
Add all the ingredients into a food processor and pulse until well combined.
Scoop into a pie dish and press into shape.
Place in the oven for 15 minutes.
Remove and fill with pie filling of your choice.
Reduce the oven temperature to 350 degrees F and bake until firm (about 35 minutes, varying by pie filling).

It’s really that easy!

Paleo Apricot Muffins

This is the simplest muffin recipe, allowing you to whip up delicious Paleo Apricot Muffins in no time at all. They are protein rich, so they make a great addition to breakfast, or a an excellent snack any time of the day. You and your guests will love them!

INGREDIENTS

1/2 cup dried apricots
1/4 cup coconut flour
1/2 cup coconut oil, melted
1 shake salt
1/4 teaspoon baking soda
4 eggs
1/2 teaspoon raw agave nectar
1/8 teaspoon vanilla essence

RECIPE

Preheat the oven to 325F.
Blend the apricots until finely chopped. Add the rest of the ingredients and pulse until well combined.
Scoop 2 tablespoons into each muffin paper liner and bake for approximately 14 minutes or until a skewer through the center comes out clean.

That’s really it! Then enjoy,

Delicious Stuffed Butternut

Here’s to hoping that the sweet couple in the supermarket who asked me what I’ll be making with organic ground lamb find this recipe – this one’s for you – and everyone else who wants to try a South African style Paleo-perfect dinner:

INGREDIENTS

1 organic butternut
1 pound organic minced ground lamb
1 tablespoon coconut oil
1/2 cup fresh diced tomato
1/4 cup Sundried tomato cut into thin slithers
1 tablespoon fresh chopped basil
2 garlic cloves chopped finely
1 fresh jalapeño chopped finely (if you like it hot!)

RECIPE

In a large pot, bring water to the boil.
Cut the butternut in half (long ways down the middle), remove the pips and place both halves in the boiling water. Cook for about 15 minutes or until tender.

In a large pan, heat the garlic and tomatoes in the coconut oil for about a minute, stirring occasionally. Add the minced ground lamb and cook until brown, stirring often.

Remove the butternut halves when cooked and place on two plates, open side up.

Sprinkle the basil and jalapeños on the cooked lamb. Stir and let simmer for another minute.

Scoop the flavorful lamb mix onto the butternut halves and enjoy.

Tip: A nice glass of Cabernet Sauvignon pairs well with this healthy dish!
